- 4 – 5 pork loin chops, boneless
- 1 1/2 lb (600g) yellow potatoes, peeled and diced
- 2 cup mushrooms, chopped
- 1 medium onion, minced
- 1 tablespoonolive oilor butter
- 6 clovesgarlic, minced
- 1 cupheavy whipping cream
- 4 oz (120g) cream cheese, softened
- 1/2 cup (120ml)chicken broth
- 3/4 cup gratedparmesancheese
- 1 tablespoonItalian seasoning
- 1 teaspooncrushed red chili pepper flakes,optional
- Sea salt and fresh crackedblack pepper

Directions
1.To prepare yourcrockpot pork chops recipe: Arrange diced potatoes in the bottom of your slow cooker and sprinkle with cracked pepper.
2.Heat oil or butter in a medium saucepan over medium heat. Add garlic and saute for about a minute, until fragrant. Add the heavy cream, cream cheese and chicken broth. Bring to a gentle simmer, then set heat to low and simmer for about 10 minutes. The sauce should thicken enough to coat the back of a spoon. Lower the heat and whisk in the Parmesan cheese, little by little until smooth. Add Italian seasoning and adjust seasoning for the cream sauce if needed. You might want to add more liquid if you feel the cream sauce is too thick.
3.Meanwhile, season the pork chops with salt, then quickly sear the pork chops in a hot skillet with a tablespoon oil on both sides, until brown on the edges. Arrange the pork chops on top of the potatoes in the slow cooker.
4.In the same skillet, sauté the sliced mushrooms with onion, scraping the brown bits from the pork chops. Add a little oil if needed. Add the mushrooms and onion on top of the pork chops and potatoes in the slow cooker.
5. When the cream sauce is ready, pour evenly over the pork chops, mushrooms, and potatoes in the CrockPot. Try to get as much sauce as possible on top of the pork chops and less on the bottom.
6.Cook your crockpot pork chops for 3-4 hours on HIGHor 6-8 hours on LOW.Serve yourCrockPot pork chops and potatoes immediately, garnished with red chili pepper flakes, chopped parsley, and grated parmesan if you like. Enjoy!

Tips for the slow cooker pork chops
This slow cooker pork chop recipe calls for few ingredients that combine for a truly delicious result. We always have everything like chicken broth, garlic, heavy cream and cream cheese on hand. So, this is really a nice “pantry staple” recipe. Here are a few tips for best results.
- Make sure to season the pork chops well before searing in the skillet.
- If you like juicier pork chops, opt for bone-in pork chops. They also tend to render more fat.
- Thickening the cream sauce is optional, but do this if you feel it is too liquid: After your pork chops and potatoes are finished, you can simply remove them from the slow cooker very carefully. Then, stir together two tablespoons of cornstarch with two tablespoons of water and add it right to the sauce. Turn the crockpot back on high and you should have a nice thick creamy sauce in just about 5-10 minutes. Conversely, if your sauce is too thick at the end, add a little chicken stock or water and mix while reheating.
- Feel free to add other veggies such as broccoli, cauliflower or squash.
- If you’re short on time, skip heating the sauce in the saucepan. Just combine everything and pour over the pork chops, mushrooms and potatoes.
How to make the slow cooker pork chops
The key to creating tender, juicy, and delicious slow cooker pork chops is all in the layering.Starting from the bottom with potatoes that will soak a maximum of juices and flavors, then pork chops sandwiched between the layers of potatoes and moist mushrooms, then smothered with the garlic cream sauce that will gather flavors from the mushrooms and meat before dripping to the bottom of the crockpot. A variant consists ofcooking the pork chops on HIGH for 2 hours and then on LOW for an additional 2 hours.

My family LOVES this recipe- even my husband who says he doesn't like mushrooms (I chop them up into smaller bits). This is a winner! It takes a little more time than a typical dump and go crockpot meal but it's WORTH the extra time. I've done it the night before, set the crockpot in the fridge overnight and in the morning just put the crock down in and set it to go! Thanks for sharing this jewel!

This is delicious but the pork was dry. I made sure not to brown chops too long but still was dry. Next time I will try to use a whole pork tenderloin. The flavor was absolutely delicious though!

I added sun dried tomatoes, green onion and shallots and extra Parmesan to my sauce. I had some left over and needed to use them. It turned out wonderful. My boyfriend and roommate loved this recipe.

Very good, I used really really thick pork chops I had, I got a nice crust on them first, I also used same oil and got a crust on the potatoes and onions, I used more mushrooms, jalapenos, I warned my milk and cream cheese first in microwave that makes the cream sauce thicken quicker and I used 2 cups of very good Parmesan, it's a tasty Recipe

I made this for the family for Sunday dinner and it was amazing! Yes, there is some prep work involved for sure, but if you season the pork chops REALLY well, and taste your sauce as you're making it (in the words of Gordon Ramsey, "TASTE EVERYTHING") this meal will turn out so good. I did mine on high for 3.5 hours. Will definitely be making this again soon.

I have not made this but looks delicious. The only thing I don't like is it seems like there is quit a bit of "prep aka cooking" before you can dump everything in the slow cooker.I plan to make this in the insta-pot so I can do it in 1 pot literally. And i will just add the cream sauce towards the end and let it simmer for short bit

I was hopeful for this. Cream sauce, potatoes and mushrooms are good. Pork chops are dry and awful. I highly suggest, if making this, do not “sear” the pork chops. Searing doesn’t em chance or seal in juices and simply risks over cooking.

Made this today and it turned out almost exactly like the picture shows up above. I over-seasoned it intentionally, thinking what the recipe called for seemed too light, and I’m glad I did, as it was very flavorful. Paired with steamed broccoli and Riesling.
